Villages Sour

This long loaf gets its distinctive taste from the addition of beer. We’ve teamed up with Villages Brewery in Deptford and are using its Rafiki IPA to give the bread a ‘dark and intense’ flavour. Conscious of waste, we are also incorporating Villages’ spent grain, a by-product of the brewing process, into our dough – giving it a lovely malty note.

Villages Brewery

Our partner for this wonderful new loaf is Villages Brewery, located in Deptford, not far from our own bakery in Greenwich. Founded and run by brothers Archie and Louis Villages, this dedicated duo are a perfect pairing for Paul Rhodes Bakery as they scour the world for the very best ingredients and aim to create the best possible taste and consistency with every brew – just like we do with our bread.

Villages constantly innovates, and also has a focus on using locally grown hops and fruits for its harvest ales and beers that are then sold by the growers in their farm shops as a way of promoting sustainability – a subject very close to our hearts.
